About this event

Adults. Ted, a Hakka chef from Taiwan, will share how food has become a way for him to rediscover the land, society, and cultural identity. With a background in food service and brewing technology, Ted founded the culinary laboratory Monsoon, which has been recognized by the Michelin Guide on multiple occasions. In recent years, he has focused on re-imagining Hakka cuisine through plant-based cooking, exploring the relationships between food, terroir, migration, and local stories. Through the concept of "Global Hakka," Ted sees regional cuisine as a medium for cross-cultural dialogue. His work also raises broader questions about how food can respond to sustainability, colonial histories, and contemporary identity. This event will be conducted in Mandarin. In partnership with Vancouver TAIWANfest. 來自台灣的客籍主廚 Ted 廖永勛,將於本場講座中,分享他如何透過料理重新理解土地、社會與文化身份。從食品科技與釀造技術出身,他所創辦的美食實驗室「季風Monsoon」多次獲得《米其林指南》推薦,近年著重以植物性料理重新詮釋客家飲食文化,Ted 持續探索食物與風土、移動經驗及地方故事之間的關係。透過「世界的客家」概念,他嘗試讓地方飲食成為跨文化對話的媒介,也重新思考料理如何回應永續、殖民歷史與當代身份認同。 講座以華語進行。 與溫哥華台灣節合辦 Accessibility Information VPL is committed to making our programs accessible for all.
